Devido ao investimento, plantio de variedades internacionais e aumento do plantio em grandes altitudes, a qualidade do vinho israelense começou a melhorar drasticamente na década de 1980 quando surgiram as vinícolas boutique. Hoje, o país está produzindo seus melhores vinhos, os principais tintos Cabernet Sauvignon, Merlot e Syrah, além de vinhos brancos dominados por Chardonnay e Sauvignon Blanc. Sendo a Galileia uma das principais regiões vinícolas, várias outras uvas são relativamente importantes, incluindo Carignan, Cabernet Franc e Riesling.
